PECAN PIE
It is always nice to have a slice of Pecan Pie when we are in Florida and it is an easy dish to make at home! This is the recipe for a traditional pecan pie
This is very much like our own treacle tart but the pecans add a more dinner party or special occasion touch
Pastry
8 oz. plain flour
4 oz butter ( unsalted is best)
2 oz of trex
1 egg yolk
1 dessertspoon of caster sugar
METHOD
Rub fats into flour with cold hands til it resembles breadcrumbs do not over mix since that will make the pastry tough.
Add egg yolk and enough water to form a soft dough
Wrap in cling film and place in fridge for half an hour while you prepare the filling.
Roll out dough and fit into tart tin.
Filling
8 oz of brown sugar
4 oz of butter (unsalted is best)
3 egg yolks
tsp vanilla extract (not essence)
4 oz of golden syrup
8 to 12 oz of pecan nuts
METHOD
Melt sugar, syrup and butter together gently.
Cool Down
Add vanilla essence and both egg yolks to the cooled mixture.
Arrange pecans in the bottom of the lined with pastry flan tin.
Pour over filling
Bake for 40 minutes or so at gas mark 4
The mixture should still be soft when it comes out of the oven Cool down and serve warm or cold.
I would serve this with sour cream or creme fraiche since Pecan pie is very sweet. On the same topic I always grate in the zest of 2 lemons and the juice of one to cut through the sweetness; however this is not traditional. Serve in small slices
You can make the pastry with self raising flour; this gives a spongier texture that some people prefer. If you have warm hands then a top tip is to put the fats into the freezer for a while and then grate them into the flour. Otherwise invest in a food proessor which makes great pastry with the chopping blade.
You will have 3 egg whites left over so why not go to the other end of the world and make a pavlova. This would use all 3 egg whites. Otherwise coconut ice or macaroons would be a good choice. Not that I want you to blow your diet or anything! Some people make egg white omelettes too.
This pie keeps well (if you can resist it) and cuts into a lot of servings, so despite the pecans, is quite economical.
